Name : French Onion Soup

Yield : 10 Portions

Ingredients :

  1. 2,5 ltr Brown Stock
  2. 500 gr Slice Onion
  3. 50 gr Butter
  4. 10 ml Salad Oil
  5. 1 tbsp Caster Sugar
  6. 50 gr Flour
  7. 200 ml Red Wine
  8. 10 gr Gruyere Croutes
  9. Salt and Pepper
Method Of Cooking :
  1. Melt butter and salad oil in the sauce pan and saute onion until brown add sugar for caramelize
  2. Sprinkle with the flour into pan and cook, stiring constanly for few minutes
  3. Add red wine and simmer until red wine get reduce in half
  4. Add the brown stock and bring to boil, season with salt and pepper
  5. Simmer for 30 minutes
  6. Serve the soup in warm soup cup and garnish with float gruyere croutons
